Apriconut Smoothie Bowl

I’ve been seeing a lot of the healthy people I follow on Instagram making smoothie bowls. Now I already drink a lot of smoothies, but I’d never really made one of these. As it’s Saturday, I always try to treat myself to a less mundane breakfast than the many variations of porridge I normally have during the week. I loved the outcome of this wonderful smoothie bowl even though I wasn’t sure how to eat this at first. Yes I actually started off using a straw 😂 but reached for a spoon not long after.

Ingredients
2 bananas
1 pear, chopped
125 ml Almond Milk
1/2 cup beetroot juice
1 tbsp pea protein
Toppings
Apricots, quartered
Pumpkin, sunflower and melon seed mix
Coconut shavings
Instructions
All the smoothie ingredients went into my Fusion Booster and I blended it until it was smooth. I then poured the contents into a bowl and added my toppings as desired. Voilà.
It was yummy, contained all of my five-a-day and pretty filling. I actually made two servings so I will halve the contents next time. You should definitely give this a go. I was great.
