Veggie Kebabs & Smoked Salmon

My dinner tonight was really yummy. I was initially craving purple stem broccoli and mash but I had no broccoli and wasn’t able to go buy some. I however had the following ingredients and opted for kebabs.
Ingredients:
Asparagus
Bell peppers
Sweet potato
Courgette
Shallots
Instructions:
I chopped all the veggies into sizeable chunks and then seasoned them with a bit of olive oil, salt and black pepper. I then sprayed the griddle with olive oil and added the potatoes to cook them as I did not fancy using the oven. When they were partly cooked, say about 20 minutes turning on all sides, I added the vegetables to the skewers ensuring the colours were alternated for a more colourful kebab. I grilled the kebabs on the griddle for around 15 minutes turning halfway.

Once the kebabs were done, I sprayed some more olive oil on the griddle, added the asparagus and the smoked salmon. There was no need to season the salmon as it was oak smoked already. They were both done within 5 minutes.
Obviously if you are a red meat eater, feel free to grill pork chops or steak instead. I might make these again with some chicken breasts.Happy grilling.
