Vegan Spelt Pancakes

Some days I really wish I lived in the States purely because my IHOP cravings get so intense.
Not sure how International this House of Pancakes is if it’s only in North and South America. 😂
Okay so that’s just shade. Don’t mind me. I decided to take matters into my own hands and make a healthier version at home. I had all the ingredients for Vegan Spelt Pancakes so I quit complaining and got on with it.
Ingredients
1/2 cup Wholegrain spelt flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tbsp coconut palm sugar
1 tbsp baking powder
3/4 cup hemp milk
4 tbsp coconut oil for frying

Instructions
Mix all the dry ingredients in a bowl and stir in the milk till you get a lump free mixture. Add more milk if you want a lighter mixture.
Lightly heat up come coconut oil in a pan. Coconut oil burns quite quickly so make sure the hob isn’t too high. Add two tablespoons of the mixture to the pan and tilt pan a little to spread. The edge of the pancake will start to bubble and will gradually move towards the centre. After another 30 seconds, you can flip it and cook the underside further. Do this for the rest of the mixture which makes around 5 pancakes.

That’s it. Yummy and super healthy and all prepared in just 15 minutes. I served mine with agave nectar, peaches and blueberries. I’ll be trying some soya ice cream next time with crushed almonds and agave.Beat that IHOP👌
