Healing Soup

After a juice cleanse comes the “healing soup” to reintroduce you to solid foods. This soup was very welcome as my hunger pangs were getting intense after my 3 day juice cleanse. If you got to this recipe, then well done for completing the cleanse. Hopefully you feel better mentally and physically.

In a medium pan, I heat up some olive oil before sautéing the onion, leek, garlic, ginger and scotch bonnet. I then added the beetroot and carrots as they take the longest to cook before adding the potatoes. I let these cook for 5 minutes and then added the courgettes, tomatoes and seasoned with the Herbamere and salt. After another 3 minutes, I added half a litre of water, added tamari sauce to taste and let simmer for 10 minutes. I added the basil 2 minutes before the end.
This soup was so yummy, I froze the remainder in two tupperware bowls and had one on Monday and the other on Wednesday.
