Antipasti di èsjé

Seeing that I eat salads more or less every day, I decided to start making my own antipasti because Sainsbury’s is getting a whole load of money from me lately. Mine has less oil in it and I can put whatever I like in it. Doesn’t it look wonderfully colourful.
Ingredients
8-10 cherry tomatoes, halved
1/4 yellow bell pepper, chopped
10 green olives
2 spring onions sliced
2 tbsp olive oil
1 tbsp apple cider vinegar
Herbs
Himalayan salt, to taste

Instructions
Combine everything in a bowl and let marinade in the fridge so the flavours infuse with one another. Store in mason jars.
Enjoy with salads or as an appetiser.
