Coconut Pancakes

I was really been craving pancakes ever since I started the Candida Diet and especially in the Cleanse phase. I could not wait till the weekend and decided to make them on Wednesday, in accordance with the diet of course. These was absolutely divine and I will definitely be making them again as they are sugar-free, yeast-free, dairy-free and gluten-free.
Ingredients
2 tbsp coconut flour
2 eggs
2 tsp xylitol
1/8 cup almond milk
Nutmeg
Cinnamon
2 tsp dairy-free sunflower butter
1/2 a lemon

Instructions
Whisk all ingredients in a bowl using a fork. Make sure there aren’t any lumps in the mixture. Add some of the butter to the pan on medium heat. When it gets hot, add about 2 tablespoons of the batter to the pan and swivel pan to spread the batter. When the top starts to bubble, flip and cook on the other side. Do this till the batter finishes and add butter as you go along.
Sprinkle on some xylitol, some dedicated coconut and drizzle with the lemon. Let me know if you make this.
