Coconut Bread

After an epic fail trying to make buckwheat pancakes, I decided to use the leftover batter to make Coconut Bread. I made the batter exactly as stated in the Ultimate Candida Diet Recipe book by Lisa Richards using:

The first pancake looked like mush. The second one was slightly more presentable but I must say it was not one of my proudest cooking moments and this never featured on insta. After that, I gave up and saved the remaining batter.

The next day, I was adamant that I needed to make something from it. So I opted for coconut bread.


Here’s how I adapted it.

If I was to measure how much was left of in the batter, I’d say 3/4 cup buckwheat flour, 1 cup water and an egg and a half. Into the batter, I sieved the coconut flour and baking powder before adding the xylitol and salt. In a separate bowl, I whisked the eggs with the oil and coconut cream. I then folded that into the batter and flour mixture. The consistency was too thick and far from appealing so I added some almond milk until I got a more pliable batter. I figured this was because there was more flour than the Lisa Richards recipe called for so I just adjusted as I saw fit. Once I was satisfied, I oiled a loaf tin with the butter and scooped the mixture in. I baked on 180 for about 40 mins, until a toothpick comes out clean.


I’ve had this bread with almond butter, dairy free butter, avocado, salmon, herring and even turkey bacon and eggs. It is extremely delicious. Here are some photos. More can be found on Instagram.



The actual recipe by Lisa Richards is from the candida diet book and can be found here. So grateful to this woman. Because of all these changes, I’m seeing so many positive changes in my health. Next week when I am 1 month into the diet I will publish my diary and let you know how I feel The Candida Diet has benefitted me.
